  • 1 3/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients:
    • In another bowl, beat the eggs and then add the buttermilk, vegetable oil, and vanilla extract. Mix until well combined.
  4. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Fold in the chocolate chips.
  5. Bake the Muffins:
    • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
    • Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  6. Cool and Enjoy:
    • Allow the muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
