Instructions:

1. Prepare the Sponge Cake:
  • Preheat your oven to 180°C (350°F). Line a 10x15 inch (25x38 cm) jelly roll pan with parchment paper.
  • In a large mixing bowl, beat the eggs and granulated sugar together using an electric mixer on high speed until the mixture is thick, pale, and has tripled in volume (about 5-7 minutes).
  • Add the vanilla extract and mix briefly to combine.
  • Sift the flour, baking powder, and salt together, then gently fold into the egg mixture using a spatula, being careful not to deflate the batter.
  • Add the milk and gently fold until just combined.
  • Pour the batter into the prepared pan and spread it evenly.
  • Bake for 10-12 minutes or until the cake is golden brown and springs back when lightly touched.
2. Roll the Cake:
  • While the cake is baking, prepare a clean kitchen towel and sprinkle it with powdered sugar.
  • When the cake is done, immediately turn it out onto the prepared towel and carefully peel off the parchment paper.
  • Starting from one short end, roll the cake up with the towel and let it cool completely.
3. Prepare the Cream Filling:
  • In a medium mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
4. Assemble the Roll Cake:
  • Once the cake has cooled, unroll it gently and remove the towel.
  • Spread the cream filling evenly over the cake, leaving a small border around the edges.
  • Roll the cake back up without the towel, making sure to roll it tightly and evenly.
  • Place the roll cake seam-side down on a serving platter.
5. Decorate the Roll Cake:
  • Garnish the top of the roll cake with fresh berries and mint leaves.
  • Lightly dust with powdered sugar for a finishing touch.
