These rich and moist chocolate muffins are packed with chunks of melted chocolate, offering a delightful treat for any chocolate lover. Perfect for breakfast or as a snack, they are easy to make and delicious to eat.
Ingredients:
- 1 3/4 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup chocolate chips
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.
- Mix Dry Ingredients:
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients:
- In another bowl, beat the eggs and then add the buttermilk, vegetable oil, and vanilla extract. Mix until well combined.
- Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Fold in the chocolate chips.
- Bake the Muffins:
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Cool and Enjoy:
- Allow the muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
